We have been catering for businesses and family get-togethers in East Texas For 20 years. As well as, entering our fair share of Cook-Off competitions, not meaning to brag BUT many trophys hang on our wall with pride.
At one of these Cook-Offs the Purple Pig was born...
The smoke was thick that day my friends, and the flames of the BBQ pits were angry on that hot and dry day, many Texas summers ago. One day while caressing pork over an open flame, juices glistening in the bright southwestern sun. It's destiny, to become a noble member of the finest lineage of pulled pork sandwich this side of the Nacogdoches.
It was then a gentleman, (and I use gentlemen in the most respectable way a southerner can), talked to me awhile, I imagine the conversation was about Rubs or Marineades or both, don't really remember, it was summer in Texas! About 115 degrees in the shade!
Anyway the gentlemen from Tennesee convinced me that colelaw would be a good topping for that pulled pork sandwich. After much debate and dust kickin' I gave in to the odd request and soon found myself apologizing for my disrespectful remarks and four letter descriptions about Tennesseeite appetites and realized that my southern friend was on to something. Thus forward that purple cabbage coleslaw topped a BBQ pork sandwich was birthed the Purple Pig!
Moral of the story, Texans may be hard headed at first, but if it tastes good going down we will come around!
